Healthy peach crisp

Okay, I’m not ready to let go of peach season yet.

Peach is THE summer flavor for me, and every year I have a hard time giving it up once fall starts creeping in. Everyone else is making apple everything and I’m over here like… but what if we just keep making peach recipes?

So here we are.

This easy peach crisp is one of those recipes that takes barely any effort but tastes like you did way more. Juicy peaches get topped with a crunchy almond flour crumble made with coconut granola, coconut oil, lots of cinnamon and two scoops of collagen.

It’s warm, cozy and lightly sweet, but still feels like a summer dessert.

And if you are officially over peaches and ready for all things apple, you can totally swap the peaches for apples. I won’t be offended.

Why You’ll Like This

  • Super easy to throw together
  • Made with simple ingredients
  • Naturally sweet and full of peach flavor
  • The crumble has a little extra protein from collagen
  • Perfect for breakfast, a snack or an easy dessert
  • Works with peaches OR apples

Ingredients

Peach Filling

  • Fresh peaches, sliced
  • Cinnamon
  • Optional: a little maple syrup if your peaches aren’t very sweet

Healthy Collagen Crumble

  • 1/2 cup Almond flour
  • 1/4 cup Crunchy coconut granola
  • 1 tbsp Coconut oil, slightly melted
  • Lots of cinnamon
  • 2 scoops collagen

How to Make

Make the Peach Filling

Preheat your oven to 350°F.

Add your sliced peaches to a baking dish and sprinkle with cinnamon. If your peaches aren’t super sweet, add a little maple syrup.

Give everything a quick toss.

Make the Crumble

In a bowl, mix together the almond flour, coconut granola, collagen and lots of cinnamon.

Add the coconut oil and mix until everything is combined and you have a crumbly, slightly clumpy mixture.

Bake

Sprinkle the crumble evenly over the peaches.

Bake for about 25–30 minutes, or until the peaches are soft and bubbly and the crumble is golden and crunchy.

Let it cool for a few minutes before serving.

Tips

Use really good peaches. This recipe is simple, so the peaches are doing a lot of the work. The sweeter and juicier, the better.

Don’t skimp on the cinnamon. I want the crumble to taste cozy and cinnamon-y, so I go pretty generous with it.

Make it with apples. If you’re officially done with summer flavors, swap the peaches for sliced apples and you’ve got an easy fall crisp.

Add your favorite toppings. A little Greek yogurt, vanilla yogurt or a scoop of ice cream would all be SO good on top.

Final Thoughts

This is basically my way of refusing to let summer go.

Peaches are still happening over here, even if everyone else has moved on to apples, pumpkin and cinnamon everything.

But honestly, that’s the beauty of this recipe. Make it with peaches now, make it with apples later and keep the same easy collagen crumble.

Basically, I’m keeping this one in rotation all year.
