Sweet Potato Fries with a Lemon Butter Sauce
I’m just going to leave this here.

There’s not much that I love more than sweet potatoes, they are so versatile! I usually enjoy them sweet in a yogurt bowl with peanut butter, don’t knock it until you try it, but today we’re enjoying sweet potato fries with a lemon butter sauce. Like come on, could anything be better?!

Lemon Butter Sauce:
- 1/4 cup butter
 - 2-4tbsps fresh lemon juice, divided
 - Six large fresh basil leafs
 - 2 cloves garlic
 - Extra chopped basil for topping
 
Instructions:
- Cook your sweet potatoes fries either in the oven or air fryer. I loveee my air fryer!
 - Melt the butter in a large skillet over medium heat. When it begins to brown, lower the heat and add the garlic and whole basil leaves. Sauté for about a minute until fragrant. Add 1 tablespoon of lemon juice. Stir and remove from the heat.
 - You can either add the cooked sweet potatoes fries to the skillet and toss to coat, or you can transfer the potatoes to a plate and drizzle the sauce over them. Sprinkle the coated potatoes with the remaining basil and squeeze more lemon over the potatoes.
