Cosmic Brownies with a Twist
Leave it to me to add peanut butter to something as nostalgic as cosmic brownies. But I couldn’t help myself! Try these today and let me know what you think.
Cosmic Brownies:
- 2 eggs
- 1/2 cup coconut sugar
- 1/2 cup almond butter
- 1/4 cup room temperature coconut oil
- 1/2 cup almond flour
- 1/2 cup cacao powder
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1/4 tsp baking powder
- 1/3 cup cacao chocolate chips
Peanut Butter Frosting:
- 2 cups powdered sugar
- 1 cup creamy peanut butter powder
- 1 tsp vanilla extract
- 4 tbsp almond milk
- natural sprinkles to top
Instructions:
- Preheat the oven to 350F and prepare an 8×8 pan by lining it with parchment paper. I like to also lightly coat the pan with non-stick spray so the edges don’t stick.
- In a large bowl combine coconut sugar, almond butter, room temperature coconut oil, vanilla and eggs. Mix with a whisk until ingredients are well incorporated.
- In a separate bowl, combine almond flour, cacao powder, baking powder and sea salt cacao chocolate chips and then pour batter into prepared baking dish. Spread evenly and bake for 17 minutes. Remove from oven and allow to cool for about 30-45 minutes.
- While the brownies are cooling, prepare the frosting. Add the frosting ingredients to a large bowl and miix using a hand mixer. Frost the cooled brownies and top with sprinkles. Enjoy!
And that’s it! Simple ingredients that taste out of this world when you add them all together. Now who’ ready for a brownie?
