Easy dinners I’m making this week (plus a cookie we can’t stop baking)

I’m back with what’s on my meal plan this week—nothing fancy, just cozy, simple recipes that make dinnertime feel a little easier (and maybe even something to look forward to for those who don’t loveeee cooking).

Whether you need a new weeknight dinner idea or just an excuse to brown some butter for cookies (hi, same), I’ve got you covered.

Here’s what’s cooking this week:

🍝 Chili Crisp Alfredo Pasta
This one’s viral for a reason. It’s creamy, spicy, and feels way more exciting than a regular pasta night—but still comes together in under 30. I use whatever chili crisp I have on hand and load it with grated parm.

🍅 Juicy Turkey Meatballs in Tomato Basil Sauce
These are so tender, thanks to a little milk-soaked bread magic. Simmered in a garlicky tomato basil sauce, they’re great over pasta, rice, or on a hoagie roll if you’re feeling it.

🌮 Baked Chicken Tacos
My go-to when I don’t want to stand at the stove. Just fill taco shells with a simple chicken + bean mix, top with cheese, and bake. Crispy edges, melty middles, no mess.

🥗 Erewhon Kale & White Bean Salad
Inspired by the overpriced grocery store salad I low-key love. It’s lemony, garlicky, and surprisingly filling. Massaging the kale is key—don’t skip it. I’ve been adding avocado when I have it.

🍪 Brown Butter Chocolate Chip Cookies
These are dangerously good. Browning the butter adds this deep, nutty flavor that makes them feel a little extra. Gooey in the middle, crisp at the edges—basically perfect. We ate half the batch before they even cooled.
