Healthy Butterfingers 🍫🥜✨

Butterfingers are such a nostalgic candy, but the store-bought ones? Packed with corn syrup, artificial flavors, and way too many ingredients I can’t pronounce. These Healthy Butterfingers take the classic crunchy, peanut buttery treat and give it a better-for-you makeover. They’re sweet, crispy, chocolatey, and made with real food ingredients you probably already have in your pantry.

The combo of natural peanut butter, manuka honey, and crunchy cornflakes gives you that iconic Butterfinger texture, while a coating of Hu Simple Dark Chocolate makes them taste bakery-level good. Honestly? I think these are even better than the original (and no sticky teeth situation 😉).


The Recipe

You’ll Need:

  • 1 + 1/2 Hu Simple Dark Chocolate Bars OR 1 cup chocolate chips

  • 1 cup natural creamy peanut butter

  • 1/3 cup honey (I used manuka honey)

  • 1/2 tsp vanilla extract

  • 1/2 tsp sea salt

  • 1 + 3/4 cups cornflake cereal


Instructions

1. Make the filling:
In a large mixing bowl, stir together the peanut butter, honey, vanilla, and sea salt until smooth. Add in the cornflakes and mix well, lightly crushing them so every piece gets coated.

2. Shape & freeze:
Scoop the mixture into bar shapes (or press into a lined dish and cut into squares). Place in the freezer until firm, about 20 minutes.

3. Melt the chocolate:
Break the Hu chocolate into pieces and microwave in 30-second increments, stirring until smooth.

4. Coat the bars:
Dip each butterfinger piece into the melted chocolate, letting the excess drip off. Place on a parchment-lined plate and return to the freezer until the chocolate sets, about 10 minutes.

Ingredients
  

  • 1 cup chocolate chips
  • 1 cup all-natural peanut butter
  • 1/3 cup honey (I used manuka)
  • 1/2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 + 1/3 cup cornflake cereal

Instructions
 

  • Add peanut butter, honey, vanilla extract, and sea salt to a large mix bowl and mix until smooth. Add the cereal. Stir everything until well-combined, crushing the cereal a bit while mixing so that all of the cereal can get coated.
  • Once frozen, melt the Hu Simple Dark Chocolate Bar (or chocolate chips) in the microwave in 30 second increments until melted, stirring in between.
  • Dip each butterfinger in the chocolate, allowing excess to drip off. Return to lined plate and stick back in freezer until chocolate sets, about 10 minutes. Store in refrigerator or freezer. Enjoy!
