Pumpkin Pie Perfect Bars – Girl Math series 🎃🍫
Perfect Bars are one of my favorite snacks, but let’s be honest… they’re pricey and not always made with the simplest ingredients. These Pumpkin Pie Perfect Bars take everything you love about the store-bought version and give them a cozy, fall-inspired upgrade. They’re chewy, protein-packed, and full of pumpkin spice flavor, with just enough chocolate to make them feel like a treat.
The combo of natural peanut butter, vanilla protein powder, and pumpkin pie spice creates that soft, Perfect Bar texture, while a handful of chocolate chips makes every bite feel a little indulgent. And because this is part of my Girl Math Series, here’s the logic: instead of spending $3+ on a single bar, you can make a whole batch at home with better ingredients for way less. Girl Math approved. 🧡
The Recipe
You’ll Need:
- ¾ cup natural peanut butter
- 1/3 cup malted honey, I used Manuka
- 1/2 cup pumpkin puree
- ½ cup vanilla protein powder
- 3 tbsp almond flour
- 2 tbsp pumpkin pie spice
- 2 tsp cinnamon
- 1/3 cup chocolate chips
- ½ tsp sea salt
Instructions:
-
Mix it up: In a large mixing bowl, stir together the wet ingredients: melted honey, peanut butter, and pumpkin puree. Then mix in protein powder, almond flour, pumpkin pie spice, cinnamon, and sea salt until smooth.
-
Add chocolate: Fold in the chocolate chips until evenly distributed OR top with chocolate chips.
-
Shape & chill: Press the mixture into a lined bread pan and refrigerate until firm.
-
Slice & enjoy: Cut into bars and store in the fridge for an easy grab-and-go snack.
Why You’ll Love These
-
Fall in every bite: Pumpkin spice + cinnamon + peanut butter = autumn snack heaven.
-
Protein-packed: Collagen + protein powder give these staying power.
-
Budget-friendly: Make a week’s worth of bars for less than the cost of two store-bought ones.
-
Better-for-you: Made with real food ingredients, no weird fillers.
-
Quick & simple: Minimal prep, ready in under 30 minutes.
These Pumpkin Pie Perfect Bars are cozy, nourishing, and the perfect way to bring fall flavor into your everyday routine. Keep them in the fridge for busy mornings, post-workout fuel, or that 3pm craving.
