Baked Strawberry Donuts! Strawberry Week day seven.
And on the seventh day she baked donuts! Ah yes, the seventh day of Strawberry Week. I don’t know about you but these last seven days just made me more hungry for strawberries. I can’t wait for you to try this donut recipe!
Baked Strawberry Donuts:
* 1 + 2/3 cups gluten free all-purpose flour
* 1/2 cup coconut sugar
* 1/4 cup crushed dried strawberries
* 1 tbsp ground flaxseed
* 1 tsp baking powder
* 1 cup unsweetened milk of choice
* 1/4 cup coconut oil, melted
* 1 tsp vanilla extract
Strawberry Frosting:
* 1/4 cup crushed dried strawberries
* 1/2 cup greek yogurt
* 1/4 cup coconut oil, melted
* 1 tsp maple syrup
Directions:
* Preheat oven to 325°F and spray two donut pans with nonstick cooking spray. Set aside. * Mix wet ingredients together, including the sugar, then mix in dry until fully incorporated. Add more melted coconut oil if the batter is too dry. Pour batter into a large plastic ziplock and cut the corner tip of the bag to pipe the batter into 10 of the donut molds. You can spoon the batter into the donut molds too but it’ll be a little messy.
* Bake for 18 minutes and mix the glaze ingredients together while the donuts are baking. Let the donuts cool completely before glazing! Enjoy right away or refrigerate in an airtight container for up to five days.
I’m sad to see Strawberry Week leave us but excited for what dedicated fruit werk lies ahead. How about an orange week next?!
