This easy homemade marshmallow fluff is light, creamy, and made with simple ingredients like honey, gelatin, and vanilla — no corn syrup needed. It whips into the perfect fluffy spread for toast, fruit, hot chocolate, or classic fluffernutter sandwiches.
In a large mixing bowl, stir together the gelatin and ¼ cup cool water. Let it sit while you prepare the syrup.(If using a stand mixer, do this directly in the mixer bowl.)
In a saucepan, combine honey, 6 Tbsp water, and vanilla.
Bring the mixture to a rolling boil, stirring occasionally, until it reaches 238–240°F.This usually takes about 10–12 minutes.
Using a hand mixer or stand mixer with a whisk attachment, set the mixer on low and slowly pour the hot syrup into the gelatin mixture.
Once combined, increase the speed to high and beat until the mixture becomes lukewarm, thick, and stretchy.This took about 7 minutes with a hand mixer.
Transfer to a jar and store in an airtight container in the refrigerator.
