High Protein Peanut Butter Chocolate Eggs (Reese’s Dupe… but Better)
Creamy, chocolate-coated peanut butter eggs made with simple ingredients and a boost of protein — a better-for-you twist on the classic treat with the perfect sweet + salty balance.
1/4cupvanilla plant-based protein powder of choice - or other vanilla protein powder
1/4cupmaple syrup
1tspvanilla extract
pinch of flaky sea salt
Chocolate coating
1cupdark chocolate chips
flaky sea salt to top
Instructions
Mix filling until fully combined and a soft dough forms.
Using a medium cookie scoop (about 1.5 tablespoons), scoop and shape into egg forms. Place on a parchment-lined tray and chill for about 30 minutes, until firm.
In a heatproof bowl (a glass measuring cup works great), melt chocolate in the microwave in 30-second intervals, stirring between each until smooth.
Dip each peanut butter egg into the melted chocolate. Use a fork to lift it out, gently tapping off excess chocolate, then place back on parchment paper.
Drizzle any extra chocolate over the top and sprinkle with flaky sea salt. Chill for 15 minutes, or until the chocolate is fully set.
