Homemade Sugar Cookie Latte (Better Than Starbucks!)

Instructions
For the syrup
Combine sugar, white chocolate chips, and water in a small pot over medium-high heat. Bring to a simmer and cook until the sugar dissolves. Stir in vanilla, almond extract, and a pinch of salt. Remove from heat and let cool completely. Store in an airtight container.
For the cold foam
Add heavy cream and vanilla to a cup. Froth until it becomes a soft, pillowy foam.
For the latte
Mix espresso with the sugar cookie syrup. Add milk and fill the cup with ice. Spoon the vanilla cold foam over the top and finish with sprinkles.
