This Lemon Blueberry Chia Seed Pudding is a bright, creamy, naturally sweetened treat made with fresh lemon juice, yogurt, and juicy blueberries. Perfect for breakfast or dessert, it thickens in about an hour and layers beautifully for an easy, spring-inspired meal prep.
1/2cupyogurt of choice, I love greek here or a thicker yogurt
3/4cupfrozen blueberries, thawed a little
Instructions
Step 1: Mix
In a bowl, whisk together the chia seeds, maple syrup, extract, milk, lemon juice, lemon zest, and yogurt until fully combined.Let the mixture sit for about 1 hour, allowing the chia seeds to thicken and create that pudding texture. (You can also refrigerate longer if prepping ahead.)
Step 2: Layer
Defrost the blueberries and spoon them into the bottom of your glass cups.Once the chia pudding has thickened, spoon it over the blueberries.
Step 3: Finish
Optional but highly recommended:Top with whipped cream and a little extra lemon zest for the prettiest finish.
