3-Ingredient Gingerbread Men Cookies (Gluten-Free + Naturally Sweetened)

These little gingerbread men are proof that holiday baking does not have to be complicated. Three main ingredients, one bowl (okay, technically a food processor), and the coziest gingerbread flavor in every bite.

They’re soft in the middle, lightly crisp on the edges, and perfectly spiced — the kind of cookie you make once and suddenly everyone’s asking for the recipe. Bonus: they’re gluten-free, naturally sweetened, and way easier than traditional gingerbread dough.

This is one of my favorite recipes to make with kids, for cookie exchanges, or when you want something festive without committing to an all-day baking project.

3-Ingredient Gingerbread Man Cookies

Ingredients

  • 100 g almond flour

  • 2–3 tablespoons maple syrup

  • 2–3 teaspoons gingerbread spice
    (More spice = darker, bolder flavor)


Instructions

  1. Preheat oven to 320°F and line a baking sheet with parchment paper.

  2. Add all cookie ingredients to a food processor and blend until a dough forms.

  3. Shape dough into a ball and roll it out between two pieces of parchment paper.

  4. Cut into gingerbread men using a cookie cutter and transfer to the prepared baking sheet.

  5. Bake for 7–10 minutes, or until lightly golden.

  6. Let cookies cool completely — almond flour cookies firm up as they cool (give them at least 30 minutes).

  7. Frost once fully cooled.


Best Frosting for Cookies

This frosting sets beautifully and is perfect for piping or spreading.

Ingredients

  • 1 cup monkfruit powdered sugar

  • 1–3 tablespoons milk of choice (adjust for consistency)

  • 1 teaspoon vanilla extract

Instructions

Whisk all ingredients together until smooth. Add more milk for a thinner glaze or less for piping consistency.
