For the Caramel Sauce

½ cup butter (I used vegan butter)

½ cup coconut sugar (or regular sugar or monkfruit)
For the Latte

1 cup milk (I used non-dairy milk)

2 tablespoons caramel sauce – recipe above

½ teaspoon vanilla extract

1 shot espresso or ¼ cup strong brewed coffee
Optional toppings: whipped cream and extra caramel sauce
How to Make It
1. Make the Caramel Sauce
In a small saucepan over medium heat, add the butter and sugar. Stir frequently until the butter has melted. Continue cooking for another 4–5 minutes, stirring constantly, until the mixture becomes dark brown and bubbly. Remove from heat and set aside.
(Tip: Keep a close eye on it — caramel can go from perfect to burnt quickly.)
2. Heat the Milk
In a separate small saucepan over low heat, combine the milk, 2 tablespoons of caramel sauce, and vanilla extract. Bring to a gentle simmer, then whisk until warmed and frothy.
