Homemade Caramel Brûlée Latte (Easy Dairy-Free Option)

There’s something about a caramel brûlée latte that instantly makes a day feel slower and sweeter. This one is simple, made with pantry staples, and comes together in just a few minutes — no fancy equipment required. It’s rich, cozy, and tastes like something you’d order at a coffee shop… except you’re making it at home in your pajamas. Plus the original recipe from Starbucks has over 48 grams in a grande… WHAT.

I love this recipe because you can easily make it dairy-free, adjust the sweetness to your liking, and keep extra caramel sauce in the fridge for later. Once you try homemade caramel, it’s hard to go back.

Why You’ll Love This Caramel Brûlée Latte

  • Made with just a handful of ingredients

  • Easily dairy-free + customizable

  • Rich, cozy, and perfectly sweet

  • Cheaper (and better) than coffee shop lattes

Ingredients

For the Caramel Sauce

  • ½ cup butter (I used vegan butter)

  • ½ cup coconut sugar (or regular sugar or monkfruit)

For the Latte

  • 1 cup milk (I used non-dairy milk)

  • 2 tablespoons caramel sauce – recipe above

  • ½ teaspoon vanilla extract

  • 1 shot espresso or ¼ cup strong brewed coffee

Optional toppings: whipped cream and extra caramel sauce

How to Make It

1. Make the Caramel Sauce

In a small saucepan over medium heat, add the butter and sugar. Stir frequently until the butter has melted. Continue cooking for another 4–5 minutes, stirring constantly, until the mixture becomes dark brown and bubbly. Remove from heat and set aside.

(Tip: Keep a close eye on it — caramel can go from perfect to burnt quickly.)

2. Heat the Milk

In a separate small saucepan over low heat, combine the milk, 2 tablespoons of caramel sauce, and vanilla extract. Bring to a gentle simmer, then whisk until warmed and frothy.

3. Assemble the Latte

Add the espresso shot (or strong coffee) to a mug. Pour the warm caramel milk mixture over the top.

4. Finish & Enjoy

Top with whipped cream and an extra drizzle of caramel sauce if you’re feeling fancy — highly recommended.

Tips & Variations

  • Store leftover caramel sauce in a sealed jar in the fridge for up to one week

  • Use oat milk for the creamiest dairy-free option

  • Add a pinch of sea salt for a salted caramel version

  • Double the caramel recipe and thank yourself later

This homemade caramel latte is cozy, comforting, and the perfect way to elevate your morning or afternoon coffee ritual. If you make it, don’t forget to tag @whatrobineats — I love seeing your creations 🤍☕️
