We’re starting strong with Peanut Butter Mousse. It’s rich, creamy, chocolatey, and tastes like a full-on dessert… but it’s secretly vegan, naturally sweetened, and comes together in minutes. This is the kind of treat you make when you want something sweet now, without turning your kitchen upside down.

Ingredients
Peanut Butter Mousse

350 g silken tofu, I love firm tofu here

3–4 tbsp smooth peanut butter, to taste

3–4 tbsp maple syrup, honey, or powdered sugar, to taste (I did a little of both maple and monkfruit powder sweetener)

1 tsp vanilla paste or extract

1 pinch sea salt
Chocolate Ganache

100 g 70% dark chocolate chips (or chopped chocolate)

Creamy top from a 400 g can full-fat coconut milk

Tip: Chill the can for at least 1 hour, then scoop mostly the solid cream from the top

Instructions

Add the silken tofu, peanut butter, maple syrup, vanilla extract, and pinch of salt to a blender.

Blend until completely smooth. Taste and adjust sweetness or peanut butter to your preference.

Spoon the mousse into ramekins or jars. Cover and place in the fridge while you make the ganache.
Make the Ganache:
4. Melt the chocolate in the microwave or using a double boiler (bain-marie).
5. Once melted, add the creamy part of the coconut milk and whisk until smooth and glossy.

Don’t worry if a little liquid coconut milk gets in — mostly cream is ideal, but some liquid is totally fine.

Pour the ganache over the peanut butter mousse.

Chill in the fridge for 1 hour, until set.
