Sweet Potato Brownies

Ingredients

  • 1 ½ cups cooked sweet potato

  • 1/2 cup almond butter

  • 1/4 cup almond flour

  • 1/4 cup cocoa powder

  • 1 tbsp oil (coconut melted, olive)

  • 1 tsp vanilla extract

  • 1/4 tsp baking soda

  • 1/4 tsp baking powder

  • Pinch of salt

  • 1/2 cup vegan chocolate chips, plus more for topping

Instructions

  1. Preheat your oven to 350°F. Line a 8×8 baking pan with parchment paper.

  2. In a large mixing bowl, add all ingredients (except the chocolate chips) and mix until smooth and fully combined.

  3. Fold in the chocolate chips, then pour the batter into the prepared pan and smooth the top.

  4. Sprinkle additional chocolate chips over the top (because more chocolate is always the right move).

  5. Bake for 25–30 minutes, until just set in the center.

  6. Let cool for at least 1 hour before slicing — this helps them firm up and get extra fudgy. Best overnight in the fridge!
