Sweet Potato Brownies
Ingredients
-
1 ½ cups cooked sweet potato
-
1/2 cup almond butter
-
1/4 cup almond flour
-
1/4 cup cocoa powder
-
1/2 cup maple syrup
-
1 tbsp oil (coconut melted, olive)
-
1 tsp vanilla extract
-
1/4 tsp baking soda
-
1/4 tsp baking powder
-
Pinch of salt
-
1/2 cup vegan chocolate chips, plus more for topping
Instructions
-
Preheat your oven to 350°F. Line a 8×8 baking pan with parchment paper.
-
In a large mixing bowl, add all ingredients (except the chocolate chips) and mix until smooth and fully combined.
-
Fold in the chocolate chips, then pour the batter into the prepared pan and smooth the top.
-
Sprinkle additional chocolate chips over the top (because more chocolate is always the right move).
-
Bake for 25–30 minutes, until just set in the center.
-
Let cool for at least 1 hour before slicing — this helps them firm up and get extra fudgy. Best overnight in the fridge!
Enjoy!!
Tips & Notes
-
The brownies will firm up as they cool — don’t skip the rest time.
-
For extra fudgy brownies, slightly underbake.
-
Store in the fridge for an even denser, almost truffle-like texture.
-
These taste even better the next day.
These are proof that “healthy” desserts don’t have to feel sad or complicated. Just cozy, chocolatey, and easy — exactly how Lazy Girl Healthy Treats should be.
