Cherry Vanilla Iced Latte

If you’re in your fruity coffee era, this one’s for you.

This Cherry Vanilla Iced Latte is bright, lightly sweet, and perfectly balanced with fresh muddled cherries and espresso. It feels fancy, but it’s made with simple ingredients — and takes maybe 5 minutes start to finish.


The Tools I Use

The muddler makes all the difference here — you really want the cherries broken down and juicy.


Ingredients

Single-Serve Cherry Syrup

(Muddle until sweetener dissolves and cherries are very soft)

  • ⅓ cup frozen cherries, slightly thawed

  • 1 tsp Lakanto monkfruit classic sweetener

  • Juice of ½ lemon

  • 1 tsp filtered water

Cherry Vanilla Iced Latte

  • 2 shots espresso
    OR 1 tbsp instant coffee + 2 tbsp hot water

  • ½–¾ cup milk of choice
    (I love making a quick 5-minute homemade cashew milk)

  • Cherry syrup (from above)

  • 1 tsp vanilla bean paste
    OR ½ tsp vanilla extract

  • Ice


How to Make It

1. Make the Cherry Syrup

Add the cherries, monkfruit sweetener, lemon juice, and water to your glass.

Using a muddler, press and twist until:

  • The cherries are fully broken down

  • The sweetener is dissolved

  • The mixture becomes juicy and syrupy

You want it jammy and vibrant.


2. Add Espresso

Pour the hot espresso directly over the cherry mixture. This helps release even more flavor and lightly melts everything together.

Give it a quick stir.


3. Build the Latte

Add ice to the glass.

Pour in your milk of choice and vanilla. Stir gently until everything blends into the prettiest soft pinky-brown color.


Why This Combo Works

  • The lemon brightens the cherries so they don’t taste flat

  • The vanilla rounds out the espresso

  • The monkfruit keeps it sweet without being overpowering

  • The cherry + coffee combo tastes like dessert but still feels balanced
