Lemon Blueberry Chia Seed Pudding

If you love a dessert that doubles as breakfast… this one’s for you.

This Lemon Blueberry Chia Seed Pudding is creamy, lightly sweet, perfectly citrusy, and layered with juicy blueberries. It feels fancy enough for a brunch table but simple enough to meal prep on a Sunday.

It’s fresh.
It’s vibrant.
And it’s one of those recipes that looks impressive but takes five minutes to mix.

I love serving these in little glass dessert cups for that extra moment:

Lemon Blueberry Chia Seed Pudding

Makes 2 servings

Ingredients

  • ½ cup chia seeds

  • 2 tbsp maple syrup

  • ½ tsp lemon extract or vanilla extract

  • ½ cup milk of choice

  • Juice + zest of ½ lemon

  • ½ cup yogurt of choice

  • ¾ cup frozen blueberries, thawed

How to Make It

Step 1: Mix

In a bowl, whisk together the chia seeds, maple syrup, extract, milk, lemon juice, lemon zest, and yogurt until fully combined.

Let the mixture sit for about 1 hour, allowing the chia seeds to thicken and create that pudding texture. (You can also refrigerate longer if prepping ahead.)

Step 2: Layer

Defrost the blueberries and spoon them into the bottom of your glass cups.

Once the chia pudding has thickened, spoon it over the blueberries.

Step 3: Finish

Optional but highly recommended:
Top with whipped cream and a little extra lemon zest for the prettiest finish.

Why You’ll Love This

  • Naturally sweetened

  • High in fiber

  • Creamy but refreshing

  • Perfect for breakfast or dessert

  • Meal-prep friendly

It’s tangy from the lemon, sweet from the blueberries, and creamy from the yogurt — the texture combo is so good.
