Healthy Marshmallow Fluff

If you’ve ever looked at the ingredient list on store-bought marshmallow fluff… you know why I started making this at home.

This easy healthy marshmallow fluff is made with just a handful of simple ingredients you probably already have in your kitchen: honey, gelatin, vanilla, and water. That’s it. No corn syrup, no artificial ingredients, and honestly? It tastes even better than the jarred version.

It’s light, fluffy, naturally sweetened, and perfect for everything from toast to fruit dips to peanut butter fluff sandwiches (a personal favorite around here).

Once you make it once, you’ll realize how simple it actually is.


Why I Love This Recipe

It’s one of those recipes that feels a little magical — you pour hot honey syrup into gelatin and suddenly you have the fluffiest marshmallow cream.


Easy Healthy Marshmallow Fluff

Ingredients

  • 1 Tbsp grass-fed gelatin

  • ¼ cup cool water

  • 1 cup honey (see notes for substitutions)

  • 6 Tbsp water

  • 1 tsp pure vanilla extract


Instructions

  1. In a large mixing bowl, stir together the gelatin and ¼ cup cool water. Let it sit while you prepare the syrup.
    (If using a stand mixer, do this directly in the mixer bowl.)

  2. In a saucepan, combine honey, 6 Tbsp water, and vanilla.

  3. Bring the mixture to a rolling boil, stirring occasionally, until it reaches 238–240°F.
    This usually takes about 10–12 minutes.

  4. Using a hand mixer or stand mixer with a whisk attachment, set the mixer on low and slowly pour the hot syrup into the gelatin mixture.

  5. Once combined, increase the speed to high and beat until the mixture becomes lukewarm, thick, and stretchy.
    This took about 7 minutes with a hand mixer. The longer you mix it, the thicker the marshmallow fluff will be. I like mine a little on the “runnier” side so i can use it in lattes!

  6. Transfer to a jar and store in an airtight container in the refrigerator.


How to Use Marshmallow Fluff

Once you have this in the fridge, you’ll start adding it to everything:

  • Spread on toast with peanut butter

  • Dip strawberries or bananas

  • Stir into hot chocolate

  • Use in fluffernutter sandwiches

  • Add to s’mores boards

  • Dollop on sweet potatoes

  • In a s’mores latte

My kids think it’s dessert… and honestly, I’m not correcting them.


Notes & Substitutions

  • Honey substitute: You can swap honey for organic cane sugar if preferred.

  • Gelatin: Grass-fed gelatin gives the best texture and helps create that classic marshmallow stretch.

  • Storage: Keep refrigerated in a sealed jar.
