Copycat Erewhon Strawberry Glaze Smoothie (Hailey Bieber Inspired)

Welcome to the first episode of my Copycat Café series — where we recreate those viral, luxury café drinks at home with simpler, better-for-you ingredients.

And we had to start with the smoothie: the Hailey Bieber Strawberry Glaze Smoothie from Erewhon Market.

It’s creamy, glossy, strawberry-packed, and honestly just fun. But instead of spending $15+ on a smoothie, we’re making a version at home that still feels just as aesthetic and indulgent — while being a little more balanced.


What Makes This One So Good

It’s all about the layers:

  • A fresh strawberry glaze at the bottom

  • Coconut yogurt swirled around the glass

  • A creamy, nourishing strawberry smoothie

  • And a little extra on top for that café finish

It’s a full moment — not just a smoothie.


Strawberry Glaze Smoothie

Strawberry Glaze

  • 5 fresh strawberries

  • Juice of ½ small lemon

  • 1 tsp maple syrup

Add glaze ingredients to a small saucepan and simmer for 15 mins, best to do this ahead of time to let cool. This is what gives that signature glossy strawberry layer.


Smoothie

  • ½ cup almond milk
    (I used my homemade strawberry cashew milk)

  • 1 cup frozen strawberries

  • ¼ avocado

  • ½ frozen banana

  • 1 Medjool date, pitted (omit for lower sugar)

  • 1–2 scoops collagen powder (optional)

  • 1 scoop strawberry or vanilla protein powder – plant based

Blend until smooth and creamy.


To Assemble

  1. Add the glaze to the bottom of your glass.

  2. Spoon or spread coconut yogurt around the sides of the glass (this is what gives that signature look).

  3. Pour in your smoothie.

  4. Top with a little extra coconut yogurt and a fresh strawberry slice.

Ingredients

Instructions
 

  • Blend smoothie ingredients until smooth and creamy.
  • Add glaze ingredients to a small saucepan and simmer for 15 mins, best to do this ahead of time to let cool.
