Iced Lemon Loaf

- 1 cup classic monkfruit sweetener
- 2 tsp baking powder
- ½ tsp baking soda

- 2 tsp vanilla extract
- 2 tbsp lemon juice
- 1 tbsp lemon zest
Frosting
- ⅔ cup vegan cream cheese
- ½ cup powdered sugar
- 1 tsp vanilla
- 1 tsp lemon juice
- 1 tsp lemon zest
Instructions
- Preheat oven to 350°F and prepare a loaf pan.
- Mix wet ingredients
In a large bowl, combine:
- dairy-free milk
- vegan yogurt
- olive oil
- vanilla extract
- lemon juice
Whisk until smooth.
- Add dry ingredients
Add in:
- flour
- monkfruit sweetener
- baking powder
- baking soda
- salt
- turmeric (if using)
Whisk until fully combined.
- Add lemon zest
Stir in the lemon zest. - Bake
Pour batter into your loaf pan and smooth the top.
Bake for 50–55 minutes, until a toothpick comes out clean. - Make the frosting
While the loaf bakes, whisk together:
- vegan cream cheese
- powdered sugar
- vanilla
- lemon juice
- lemon zest
Refrigerate until ready to use.
- Cool completely
Let the loaf cool fully at room temperature. - Frost + slice
Once cooled, spread frosting over the top, slice, and enjoy.

- 2 tsp baking powder
- 1/2 tsp baking soda
- dash turmeric for color
- 1/2 tsp sea salt
- 1 cup milk of choice
- 1/2 cup regular or vegan greek yogurt
- 1/2 cup olive oil
- 2 tsp vanilla extract
- 2 tbsp lemon juice
- 1 tbsp lemon zest
For the frosting
- 2/3 cup cream cheese of choice
- 1/2 cup powder sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1 tsp lemon zest
Instructions
- Preheat oven to 350°F and prepare a loaf pan.
- Mix wet ingredients until smooth, set aside
- Whisk dry ingredients together with lemon zest then carefully fold into the wet, don't over mix!
- Pour batter into your loaf pan and smooth the top.Bake for 50–55 minutes, until a toothpick comes out clean.
