Iced Lemon Loaf

Ingredients

Loaf

  • 2 cups all-purpose flour
  • 1 cup classic monkfruit sweetener
  • 2 tsp baking powder
  • ½ tsp baking soda
  • Dash turmeric (optional, for color)
  • ½ tsp salt
  • 1 cup dairy-free milk
  • ½ cup vegan yogurt
  • ½ cup olive oil
  • 2 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest

Frosting

  • ⅔ cup vegan cream cheese
  • ½ cup powdered sugar
  • 1 tsp vanilla
  • 1 tsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Preheat oven to 350°F and prepare a loaf pan.
  2. Mix wet ingredients
    In a large bowl, combine:
  • dairy-free milk
  • vegan yogurt
  • olive oil
  • vanilla extract
  • lemon juice

Whisk until smooth.

  1. Add dry ingredients
    Add in:
  • flour
  • monkfruit sweetener
  • baking powder
  • baking soda
  • salt
  • turmeric (if using)

Whisk until fully combined.

  1. Add lemon zest
    Stir in the lemon zest.
  2. Bake
    Pour batter into your loaf pan and smooth the top.
    Bake for 50–55 minutes, until a toothpick comes out clean.
  3. Make the frosting
    While the loaf bakes, whisk together:
  • vegan cream cheese
  • powdered sugar
  • vanilla
  • lemon juice
  • lemon zest

Refrigerate until ready to use.

  1. Cool completely
    Let the loaf cool fully at room temperature.
  2. Frost + slice
    Once cooled, spread frosting over the top, slice, and enjoy.

For the loaf

  • 2 cups all-purpose flour
  • 1 cup classic Lakanto monkfruit sweetener - or regular cane / coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • dash turmeric for color
  • 1/2 tsp sea salt
  • 1 cup milk of choice
  • 1/2 cup regular or vegan greek yogurt
  • 1/2 cup olive oil
  • 2 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest

For the frosting

  • 2/3 cup cream cheese of choice
  • 1/2 cup powder sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 tsp lemon zest

Instructions
 

  • Preheat oven to 350°F and prepare a loaf pan.
  • Mix wet ingredients until smooth, set aside
  • Whisk dry ingredients together with lemon zest then carefully fold into the wet, don't over mix!
  • Pour batter into your loaf pan and smooth the top.Bake for 50–55 minutes, until a toothpick comes out clean.
  • While the loaf bakes, whisk together the frosting
  • Let the loaf cool fully at room temperature.
  • Once cooled, spread frosting over the top, slice, and enjoy. Add some lemon slices if you'd like!
