Carrot Cake Iced Latte

Carrot Cake Syrup

  • 1 cup shredded carrots
  • ¾ cup water
  • 1 cup brown sugar
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • Pinch of ground ginger
  • 1 tsp vanilla bean paste

Latte

  • 2 shots espresso
  • 1–2 tbsp cream cheese
  • Dash of vanilla extract
  • Ice
  • Milk of choice

Optional:

  • Vanilla cold foam
  • Cinnamon for topping

Instructions

1. Make the Carrot Cake Syrup

Add all syrup ingredients (except vanilla) to a small saucepan over medium heat.

Bring to a gentle boil, then reduce heat and let simmer for 10–12 minutes, allowing the flavors to infuse.

Remove from heat, stir in the vanilla bean paste, then strain out the carrots. Let cool.


2. Make the Espresso Base

While the syrup cools, whisk together:

  • hot espresso
  • cream cheese
  • vanilla extract

Whisk until smooth and creamy. This gives that subtle “frosting” vibe.


3. Assemble the Latte

Fill a glass with ice.

Add:

  • 1–2 tbsp carrot cake syrup
  • espresso mixture

Top with your milk of choice.


4. Finish

Optional, but highly recommended:

  • Add vanilla cold foam
  • Sprinkle with cinnamon
  • And yes… a little carrot on top for the aesthetic
