Carrot Cake Iced latte
If carrot cake and your morning latte had a baby… this would be it.

This carrot cake iced latte is cozy, lightly spiced, perfectly sweet, and has that subtle creamy tang thanks to the whipped cream cheese espresso (trust me on this). It feels like a bakery treat in a glass — but made right at home.
It’s one of those drinks that makes your morning feel a little more special.
Why You’ll Love This
- Tastes like carrot cake in latte form
- Warm spices + sweet vanilla flavor
- Creamy, slightly tangy espresso moment
- Perfect for spring mornings
- Feels like a café drink at home
Carrot Cake Iced Latte
Carrot Cake Syrup
- 1 cup shredded carrots
- ¾ cup water
- 1 cup brown sugar
- ½ tsp cinnamon
- ⅛ tsp nutmeg
- Pinch of ground ginger
- 1 tsp vanilla bean paste
Latte
- 2 shots espresso
- 1–2 tbsp cream cheese
- Dash of vanilla extract
- Ice
- Milk of choice
Optional:
- Vanilla cold foam
- Cinnamon for topping
Instructions
1. Make the Carrot Cake Syrup
Add all syrup ingredients (except vanilla) to a small saucepan over medium heat.
Bring to a gentle boil, then reduce heat and let simmer for 10–12 minutes, allowing the flavors to infuse.
Remove from heat, stir in the vanilla bean paste, then strain out the carrots. Let cool.
2. Make the Espresso Base
While the syrup cools, whisk together:
- hot espresso
- cream cheese
- vanilla extract
Whisk until smooth and creamy. This gives that subtle “frosting” vibe.
3. Assemble the Latte
Fill a glass with ice.
Add:
- 1–2 tbsp carrot cake syrup
- espresso mixture
Top with your milk of choice.
4. Finish
Optional, but highly recommended:
- Add vanilla cold foam
- Sprinkle with cinnamon
- And yes… a little carrot on top for the aesthetic
My Tips
- Adjust syrup amount depending on how sweet you like it
- Blend the espresso + cream cheese if you want it extra smooth
- Store leftover syrup in the fridge for up to a week
- Homemade cashew or oat milk works so well here
What It Tastes Like
Warm, cozy spices with a sweet, slightly caramel-like base and a creamy finish. It truly tastes like carrot cake meets iced latte — comforting but still refreshing.
