No-bake Cookies Dough Bites

These cookie dough cups are the perfect little bite when you’re craving something sweet but want to keep it simple. A soft cookie dough base, creamy peanut butter layer, and rich chocolate top — all made with just a handful of ingredients.

They’re no-bake, easy to prep, and perfect to keep in the freezer for a quick treat.

Cookie Dough Cups

Ingredients

Cookie Dough Base

  • ¾ cup almond flour
  • 2 tbsp maple syrup
  • ½ tsp vanilla
  • 2–3 tbsp non-dairy milk
  • 2 tbsp chocolate chips

Topping Layers

  • ½ cup chocolate chips
  • 1 tsp coconut oil
  • ⅓ cup peanut butter chips
  • 1 tsp coconut oil

Instructions

1. Make the Cookie Dough

In a bowl, mix:

  • almond flour
  • maple syrup
  • vanilla
  • non-dairy milk

Stir until a dough forms. Adjust with more almond flour if too wet, or more milk if too dry.

Fold in chocolate chips.


2. Form the Cups

Press the cookie dough evenly into mini cupcake liners OR silicone ice cube tray to form the base.

Place in the freezer while preparing the toppings.


3. Melt the Peanut Butter Layer

Melt peanut butter chips with 1 tsp coconut oil until smooth.

Pour over the cookie dough layer and freeze for 10 minutes.


4. Melt the Chocolate Layer

Melt chocolate chips with 1 tsp coconut oil until smooth.

Pour over the peanut butter layer.


5. Freeze

Freeze for 1–2 hours, or until fully set and solid.

Remove from liners and enjoy.


My Tips

  • Mini cupcake liners work best or a silicon ice cube tray
  • Store in freezer for best texture
  • Add flaky salt on top for sweet + salty
  • Use dairy-free chips if keeping fully vegan
