Erewhon Chocolate Chip Banana Bread

Wet Ingredients

  • 1.5 cups mashed bananas (about 4 ripe medium bananas)
  • ⅓ cup melted butter or melted coconut oil
  • ½ cup manuka honey or regular raw honey
  • 2 large eggs
  • 1 tsp vanilla extract or vanilla bean paste

Dry Ingredients

  • 1 ¾ cups whole wheat flour
  • 2 tbsp cornstarch
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • Pinch ground nutmeg
  • ¼ tsp salt

Mix-Ins

  • ½–1 cup chocolate chips

Instructions

1. Prep

Preheat oven to 360°F.
Line and grease a 4×8 or 5×9 inch loaf pan.


2. Mix Wet Ingredients

In a large measuring jug or bowl, whisk together:

  • mashed bananas
  • melted butter or coconut oil
  • honey
  • eggs
  • vanilla

Whisk until smooth and combined.


3. Combine Dry Ingredients

In a large mixing bowl, combine:

  • whole wheat flour
  • cornstarch
  • baking soda
  • cinnamon
  • nutmeg
  • salt

Mix well.


4. Make the Batter

Pour wet ingredients into dry ingredients.

Fold gently using a spatula or wooden spoon just until combined.
Do not overmix.

Fold in chocolate chips.


5. Bake

Transfer batter to prepared loaf pan and spread evenly.

Bake for about 50 minutes, or until a toothpick inserted comes out just clean.


6. Cool

Cool in pan for 10 minutes, then remove and allow to cool completely on a rack before slicing.

  • pinch ground nutmeg
  • 1/2 cup manuka or regular honey
  • 2 large eggs
  • 1 1/2 cups mashed bananas (about 4 ripe medium bananas)
  • 1/3 cup melted butter or melted coconut oil
  • 3 tbsp milk of choice
  • 1 tsp vanilla extract or vanilla bean paste
  • 1/2 - 1 cup chocolate chips + more for topping (measure with your heart)

Instructions
 

  • Prep: Heat oven to 360°F. Line and grease a 4×8 OR 5×9 inch loaf pan.
  • Make batter: Whisk together all wet ingredients in a large measuring jug. Combine all dry ingredients well in a large mixing bowl. Add the wet to the dry ingredients and fold JUST until combined (use a spatula or wooden spoon, NOT a whisk for combining the batter!). Fold in chocolate chips
  • Bake: Transfer batter to prepared pan & top with more chocolate chips. Bake in hot oven for 50 minutes, or until a toothpick inserted comes out just clean. Cool in pan on a cooling rack for 10 minutes, then remove carefully, peel off baking parchment and cool completely on cooling.
