Ferrero Rocher Stuffed Dates
A little nostalgic, a little fancy-feeling, and surprisingly easy to make at home!

These are the kind of treats that feel way more impressive than the effort they take. Think creamy chocolate hazelnut filling, crunchy hazelnuts, a crisp chocolate shell — and somehow it all starts with Medjool dates.
They remind me of Ferrero Rocher candies I used to eat at my grandma’s house in the best way, but made with simpler ingredients and no baking required. I love keeping these in the fridge for when I want something sweet after dinner that feels a little extra.
Why You’ll Love It
- Tastes like a homemade Ferrero Rocher moment
- No baking required
- Made with simple ingredients
- Naturally sweetened with dates
- Crunchy, creamy, and chocolatey
- Perfect for keeping in the fridge for a little treat
Ferrero Rocher Stuffed Dates
Ingredients
- 6 Medjool dates
- 6 tablespoons chocolate hazelnut butter
- 6 whole hazelnuts
- ½ cup vegan chocolate chips
- ¼ cup crushed hazelnuts
Instructions
Prep the dates
If your dates still have pits, carefully slice each one lengthwise and remove the pit while keeping the date intact.
Fill the dates
Spoon about 1 tablespoon of chocolate hazelnut butter into each date.
Press one whole hazelnut into the center of each one.
Place the stuffed dates in the freezer for about 1 hour so the filling can firm up.
Make the chocolate coating
Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring each time until smooth.
Stir in the crushed hazelnuts for that crunchy outer layer.
Coat the dates
Dip each stuffed date into the melted chocolate mixture until fully coated.
Place them on a parchment-lined plate or tray and transfer to the fridge or freezer until the chocolate hardens.
Enjoy straight from the fridge.
Tips
- Soft Medjool dates work best
- Freezing the dates before dipping makes everything less messy
- Add flaky sea salt on top if you love a sweet + salty moment
- Keep these in the fridge for an easy little dessert
Final Thoughts
These feel like one of those “how is this so easy?” recipes. They’re simple, chocolatey, and perfect when you want a little dessert moment without baking an entire cake.
