Protein Packed Lemon Blueberry Chia Seed Pudding

A bright, creamy breakfast that tastes like dessert (which feels very on-brand around here)

This lemon blueberry chia seed puddings feels like something you’d order at a cute wellness café for way too much money… except it’s incredibly easy to make at home. It has creamy blueberry chia pudding, bright lemon flavor, fresh berries, and layers of yogurt and lemon curd that make it feel extra fun.

I also added GoodOnYa grass-fed collagen peptides for a little protein boost, which blends in seamlessly and makes this feel even more nourishing for breakfast, snack time, or honestly dessert.

Blueberry Lemon Chia Pudding

Ingredients

  • 6 tbsp chia seeds
  • ½ cup milk of choice
  • 1 cup Lifeway Kefir kefir (or milk of choice)
  • ½ cup blueberries
  • ¼ cup yogurt of choice
  • 3 tbsp maple syrup
  • 1–2 scoops GoodOnYa grass-fed collagen
  • 2–4 tbsp lemon juice (depending on how lemony you want it)

For Layering

  • organic lemon curd
  • extra yogurt
  • fresh blueberries

Instructions

Add your milk, Lifeway Kefir kefir, blueberries, yogurt, maple syrup, lemon juice, and GoodOnYa collagen to a blender and blend until smooth.

Pour the blended mixture into a bowl or jar and stir in the chia seeds.

Cover and refrigerate for at least 1 hour, or overnight, until thick and pudding-like.

Once thickened, layer into jars or glasses with lemon curd, extra yogurt, and fresh blueberries.

Top with extra berries or even sprinkles if you want a little whimsy moment.


Tips

  • Let it chill overnight for the thickest texture
  • Adjust lemon juice based on how tart you like it
  • Use frozen blueberries if that’s what you have on hand
