PB & J oatmeal breakfast bars

Soft, chewy baked oatmeal bars with creamy peanut butter and swirls of raspberry jelly in every bite. An easy, make-ahead breakfast that tastes like a PB&J but totally counts as breakfast.

Ingredients
  

  • 1 cup oats, rolled or instant
  • 1 cup oat flour, or oats blended into flour
  • 3/4 cup mashed banana, about 2 large ripe bananas
  • 1/4 cup + 2 tbsp creamy natural peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup dairy-free milk
  • 1 tbsp ground flax seeds
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 1/2 tsp sea salt
  • Raspberry jelly, or use my homemade chia seed jam
  • Additional creamy peanut butter, for swirling

Instructions
 

  • Start by mashing your bananas in a large bowl. Add the peanut butter, maple syrup, milk, flax seeds, baking powder, vanilla, salt, oats, and oat flour. Mix everything together until well combined.
  • Line a baking tray with parchment paper and pour in the oatmeal mixture, spreading it out evenly.
  • Add big dollops of peanut butter and raspberry jelly all over the top. Use a knife to swirl them together — and don't worry about making it perfect. The messier the swirl, the better.
  • Bake at 350°F for 25–28 minutes, or until set and lightly golden.
    Let cool slightly, slice into bars, and enjoy.
