Ingredients

• 8 oz dried, pitted dates
• 1/3 cup coconut oil, melted
• 1/2 cup almond or cashew butter (or any nut/seed butter you love)
• 2 tsp pure vanilla extract
• 1/2 tsp this flaky sea salt

Other:
• Boiling water (for soaking dates)
• Flaky sea salt (optional, for topping)


Instructions

  1. Soak the dates: Add dates to a bowl and cover with boiling water. Let them soak for 5–10 minutes to soften. Melt the coconut oil in the meantime.

  2. Blend the fudge: Drain dates and transfer them to a food processor. Add melted coconut oil, nut/seed butter, vanilla, and salt. Blend until smooth and creamy, pausing to scrape down the sides.

  3. Shape: Press the mixture into a parchment-lined loaf pan. Smooth the top and finish with more flaky sea salt if you’d like.

  4. Freeze: Freeze for 4–5 hours, or until firm and sliceable.

  5. Serve: Cut into bite-sized squares and enjoy! Store extras in the freezer.
