Lemon Blueberry Chia Seed Pudding

This Lemon Blueberry Chia Seed Pudding is creamy, lightly sweet, perfectly citrusy, and layered with juicy blueberries. It feels fancy enough for a brunch table but simple enough to meal prep on a Sunday.

Lemon Blueberry Chia Seed Pudding
Makes 2 servings
Ingredients

½ cup chia seeds

2 tbsp maple syrup
-
½ tsp lemon extract or vanilla extract

½ cup milk of choice
-
Juice + zest of ½ lemon
-
½ cup yogurt of choice
-
¾ cup frozen blueberries, thawed
How to Make It
Step 1: Mix
In a bowl, whisk together the chia seeds, maple syrup, extract, milk, lemon juice, lemon zest, and yogurt until fully combined.
Let the mixture sit for about 1 hour, allowing the chia seeds to thicken and create that pudding texture. (You can also refrigerate longer if prepping ahead.)
Step 2: Layer
Defrost the blueberries and spoon them into the bottom of your glass cups.
Once the chia pudding has thickened, spoon it over the blueberries.
Step 3: Finish
Optional but highly recommended:
Top with whipped cream and a little extra lemon zest for the prettiest finish.
