Need more vegetables in your life but you’d rather eat dessert? Yeah, me too. If we are friends on Instagram then you might have noticed how big of a sweet tooth I have. If I can cover it with a nut butter syrup drizzle, I’m doing it. A few years ago I found myself wanting to eat more vegetables, but I didn’t want to eat them in a savory way. My creative wheels started turning in hopes of figuring out a way to eat dessert for breakfast with some veggies in it. That’s when my cauli-oat bowls and bakes were created!
I’ll start off by saying no, you cannot taste the cauliflower. Like not at all! I’ve masked the cauliflower in delicious ingredients like cacao powder, peanut butter, and all other foods sweet and nutritious.
I understand how strange these creations can sound because of the cauliflower, but I’ve yet to have someone say they didn’t love my cauli-oat bowls and bakes after their first bite. Your parents can thank me later when you tell them you ate cauliflower for breakfast. Poppy loves them too!
