Salsa Verde Crockpot Chicken – in collaboration with La Victoria Mexican Salsa

I’m a chunky salsa kind of gal. That’s why when LA VICTORIA, a delicious line of authentic, flavorful Mexican sauces and salsas, reached out to collaborate with their Thick’N Chunky Salsa Verde I basically gave a big “hand flick” and “party” emoji all at the same time. They’re inspired by a century-old family recipe that lies at the heart of American food culture todayand I love that their tomatoes are sourced from California’s fertile central valley.

My go-to family recipe when I have a jar of LA VICTORIA Thick’N Chunky Salsa Verde is crockpot salsa chicken – it’s bold and inviting, with plenty of jalapeno pepper. Your taste budswill be rewarded since it’s easy, delicious, and lasts the entire week. It’s the perfect meal prep for tacos, salads, burrito bowls, or tossing on a plate with veggies. You really can’t go wrong with how you enjoy it!

Salsa Verde Crockpot Chicken:

6 boneless, skinless chicken breasts
2 cups LA VICTORIA Thick’N Chunky Salsa Verde (LA VICTORIA Mexican sauces and salsas are always made with real, simple ingredients. They’re available in the salsa aisle of most major grocers along the West Coast, including Safeway, Albertson’s and Ralph’s.)
2 teaspoons cumin
Sea salt and black pepper to taste

 

Directions:

Add chicken to the slow cooker. Top with salsa verde, sprinkle with cumin, and season with a few generous pinches of sea salt and pepper. Use a pair of tons or a spoon to turn the chicken so that both sides are coated. Cover.
Cook for 6 hours on low heat.
The chicken is ready when easily shreds with a fork. Shred the chicken in the slow cooker and toss with the juices.
Then remove the chicken with a slotted spoon and serve warm. Or, store the shredded chicken in a sealed container in the refrigerator for up to 5 days.

 

I used the chicken for a burrito bowl today with brown rice, shredded lettuce, tomatoes, green onion, fresh lime, and blue corn tortilla chips. How would you use LA VICTORIA Thick’NChunky Salsa Verde?

Key Lime -No Bake- Cheesecake

Ingredients-
Key Lime Cheesecake:
  • 8 oz. almond cream cheese, softened (or regular dairy)
  • 1 cup non-dairy greek yogurt (or regular dairy)
  • 4 tablespoons Manuka honey
  • ⅓ cup lime juice
  • 1 teaspoon vanilla extract
Crust:
  • 10 graham crackers
  • 2 tablespoons vegan butter, melted (or regular dairy)
  • Whip cream for topping

Directions-

  1. Using a hand mixer, combine almond cream cheese, almond greek yogurt, honey, vanilla, and lime juice. Set aside
  2. To a food processor, or high speed blender, add graham crackers and vegan butter. Blend until graham crackers are crumbs and everything is mixed together.
  3. Evenly distribute the crust among five small mason jars. Patting down the crust down.
  4. Next, evenly distribute the key lime cheesecake among the mason jars. Cover and place in refrigerator for 1 hour or overnight.
  5. Top with whip cream, extra graham cracker crumbs, and sliced lime! 😍🍯

Sammie Smackdown – When Pigs Fly

Life is like a sandwich, you have to fill it with the best ingredients.”

Sandwiches! I’ve yet to meet someone that doesn’t love a sandwich. There’s something comforting about two pieces of bread (toasted preferably) filled with goodies. Sandwiches are lovable for multiple reasons; convenience, versatility, comfort, mess-free (exception of the drippy-egg), and endless combinations. This is why I literally ran to the kitchen after Canyon Gluten-Free Bakehouse asked me to create an epic sandwich for their Sammie Smackdown competition. The opportunity to put my “Strange but Good” kitchen skills to the test could not be missed!

The Canyon Bakehouse Sammie Smackdown campaign is more than mouthwatering sandwiches. The Sammie Smackdown allows four gluten-free bloggers like myself to create their tastiest sandwich ever to compete for fan votes! The blogger with the winning sandwich will receive a $10,000 donation to their charity of choice. In choosing a charity, I wanted it to pertain to my life.

Growing up I competed in scholarship pageants. Enhancing my social skills onstage and in interviews, personal growth, becoming involved in my community, and being awarded educational funding were just a few of the many aspects of scholarship pageants. The Council for Youth Empowerment (CYE) believes that young people are our greatest natural resource and that their education and commitment to service is the cornerstone of a strong and successful nation. With a mission to promote family and community, the Council for Youth Empowerment is continually striving for a brighter future and is well deserving of the $10,000 donation.

Throughout my pageant years I adapted a healthy lifestyle, learning that a strong body equals a healthy mind. With a pageant title comes the responsibility to encourage others to live a healthy lifestyle trough fitness and nutrition. Thus sparked my interest for all things food and how to enjoy my favorite foods while living a healthy lifestyle. What Robin Eats has grown to be more than a fun hashtag to post under my food photos. What Robin Eats has become a platform to encourage everyone that eating healthy does not have to be boring! I am not sure that I would of discovered my passion for a healthy lifestyle if it weren’t for pageants.

Avocado with a Crunch

Avocado Chicken and “Cream Cheese” Egg Rolls

Hopefully everyone is out of their Super Bowl food coma because these Avocado Chicken and “Cream Cheese” egg rolls need to be made asap!

These barely lasted two days in our home!

I knew I should of hid these from my husband. 😉

Ingredients: (Makes 8, Calories 222, Carbs 24g, Protein 10g, Fat 9g)

  • 8 egg roll wrappers
  • 1/4 cup Kite Hill Almond Cream Cheese Spread (or light cream cheese)
  • 6 ounces cooked and diced chicken breast
  • 1/4 cup sun-dried tomatoes, chopped into small pieces
  • 1/2 cup diced sweet onion
  • 3 medium avocados
  • 1/4 cup green onion
  • Pepper and Salt
  • 2 Limes, Juiced

Directions:

  • Preheat oven to 400 degrees F.
  • Line a baking sheet with parchment paper, spray with non-stick cooking spray, and set aside.
  • Mash Avocados in a medium size bowl. Mix in diced onion, sun-dried tomatoes, green onion, salt, pepper, and lime juice to taste, set aside.
  • Combine cooked and diced chicken with Almond Cream Cheese in a small bowl.
  • Fill egg rolls.
  • Start with a corner facing you, and add about 1/4 cup of filling to the center of the wrapper.
  • Fold the corner facing you over the filling, tuck in the sides, and finish rolling.
  • Place the rolls on the baking sheet.
  • When finished, spray the rolls with cooking spray.
  • Bake for about 20 minutes until they are golden brown, flipping them halfway through.
  • I served these bad boys with Coconut Aminos. Enjoy!

Some days I like my coffee black.

Other days I want a coffee that will take me on a sweet tooth caffeine adventure. 🙂

Being the sweet tooth gal that I am, I have to make sure I’m still getting my greens along with my chocolate fix.

Pumpkin, Peanut Butter, and Jelly Sandwich in a Jar.

Pumpkin Peanut Butter and Strawberry Overnight Porridge

With LA being a million degrees during the first week of fall, a girl needed to improvise on how to get her “Pumpkin Everything” fix without standing in front of the stove.

I’ve done the basic combos for pumpkin: chocolate and pumpkin, banana and pumpkin, even ricotta cheese and pumpkin. I needed something new and exiciting for my tastebuds!

This is where strawberry comes into play.

Partnering with Vitamin Shoppe for new fall recipes, I decided that strawberries needed their pumpkin fix too!

Lets get this pumpkin party started. 😉

Ingredients: (Serves 1: Calories 342, Protein 22g, Carbs 42g, Fat 10g)

Note* I doubled the recipe to make two servings

For porridge-

Peanut Butter Pumpkin Topping-

  • 1/2 Tablespoon Flax and Chia seed peanut butter (Trader Joes)
  • 2 Tablespoons Pumpkin Pure
  • 1/2 Teaspoon Pumpkin Spice
  • 1/2 Teaspoon Cinnamon (I like a lot of spice, this is totally your preference)

Misc-

  • 1 Whole Strawberry

Directions:

  • Place ALL porridge ingredient in a jar, shake, and leave overnight in the refrigerator.
  • In the morning, stir, and dived into two glasses (If making two servings)
  • Combine Peanut Butter Pumpkin toppings together in a small ramekin, then top Porridge.
  • Decorate with as many fresh strawberries as you’d like. ENJOY!

Tip: You can Substitute the protein powder for any flavor you have. I highly recommend the Strawberry flavor though, JUST SAYIN. 🙂

Pizza Party at 8am

What more could you ask for in a breakfast flatbread pizza?

Maybe a breakfast flatbread pizza that takes less than 15 minutes? I got you covered! 🙂

The combination of whole milk ricotta cheese and light mozzarella cheese, fresh basil, homegrown tomatoes, and diced fig is Unreal. The perfect amount of savory and sweet to start your day.

Ingredients: (Serves 1, Cals 338, Carbs 43g, Protein 20g, Fat 10g)

  • 1/4 cup light mozzarella cheese
  • 4 tablespoons whole milk ricotta cheese
  • 1 diced vine tomato, homegrown preferred for the sweetest tasting tomato EVER
  • 1 ounce diced fig
  • fresh basil leaves
  • 1/2 Trader Joes Whole Wheat Lavish bread

Directions:

  • Preheat oven to 425 degrees F, spray cooking oil on pizza pan and set aside.
  • Combine ricotta cheese and mozzarella cheese together, spread evenly on Lavish bread.
  • Decorate with diced tomato, fig, and basil. Place on sprayed pizza pan and  bake for 7-8 minutes (or desired crispness of the crust).
  • When done, slice into as many slices as you’d like. Or pick the entire pizza up and eat. To each its own. 😉
