Add blueberries and maple syrup to a small saucepan over medium heat.Cook until the blueberries burst and release their juices, about 8–10 minutes, stirring occasionally.Mash slightly with the back of a spoon, then stir in vanilla extract and optional lemon zest.Let cool slightly. Strain if you prefer a smooth syrup, or leave as-is for more texture.
Assemble the Latte
Add 1–2 tablespoons blueberry syrup to your glass.Pour in the espresso and stir to combine.Add ice if making iced.Top with milk of choice.
Taste and add more maple syrup if you'd like it sweeter. Stir and enjoy.
