Blueberry Pancake Iced Latte
This one tastes like a cozy stack of blueberry pancakes… in latte form. This blueberry pancake latte is unreal!!

Blueberry Pancake Latte
Blueberry Syrup
- 1 carton fresh blueberries
- 2–3 tbsp maple syrup (or sugar of choice, but the maple gives it a real pancake tastes)
- ½ tsp vanilla extract
- Optional: lemon zest
For the Latte
- 2 shots espresso (or ½ cup very strong coffee)
- 1 cup milk of choice (homemade cashew milk is amazing here)
- Additional maple syrup, to taste
- Ice (optional for iced version)
Instructions
1. Make the Blueberry Syrup
Add blueberries and maple syrup to a small saucepan over medium heat.
Cook until the blueberries burst and release their juices, about 8–10 minutes, stirring occasionally.
Mash slightly with the back of a spoon, then stir in vanilla extract and optional lemon zest.
Let cool slightly. Strain if you prefer a smooth syrup, or leave as-is for more texture.
2. Assemble the Latte
Add 1–2 tablespoons blueberry syrup to your glass.
Pour in the espresso and stir to combine.
Add ice if making iced.
Top with milk of choice.
3. Finish
Taste and add more maple syrup if you’d like it sweeter.
Stir and enjoy.
