Healthy Apple Strudel Muffins

Healthy Apple Strudel Muffins:

  • 2 cups diced apples, I use honey crisp
  • 1/2 cups Lakanto brown monkfruit sweetener
  • 1/2 cup Lakanto monkfruit sweetener
  • 1/2 cup coconut oil softened 
  • 1/2 cup milk of choice
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla
  • 2 cups gluten free 1-to-1 all purpose flour + 2 tsps for coating apples or regular flour
  • 2 tsp cinnamon + 1/2 tsp for coating apples
  • 1 + 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1/8 tsp cardamom

Crumb Topping:

Instructions:

  • Preheat oven to 425°F degrees.
  • Peel and core your apples. Dice them in roughly equal size pieces.  Add the diced apples to a bowl with 2 tsp flour and 1/2 tsp cinnamon. Toss to coat all the apples. 
  • In a large bowl, add coconut oil and both sugars. Mix together. Add in the milk, applesauce, and vanilla. Mix together until combined.  Add all dry ingredients except and fold together just until combined again, do not over mix! Fold in apples.
  • Fill muffin cups 3/4 of the way full, set aside. Add all the crumble ingredients together to a small bowl and mix with a fork. Add on top before putting in the oven.
  • Bake at 425°F for 5 minutes, then reduce to 375°F for 15-17 minutes or until toothpick inserted comes out clean.
  • Remove from oven and let cool before serving.
