Healthy Snickers Protein Bars

If you’re craving a classic candy bar but want something made with simple ingredients, these healthy Snickers protein bars are it. Think soft nougat, gooey date caramel, crunchy peanuts, and a rich dark chocolate coating — all layered together.

They’re sweet, satisfying, and honestly feel like the real thing… just a little more elevated.

With Easter right around the corner, I wanted to make something other than peanut butter eggs. Those are always good, but I was craving something a little different this year — and these completely delivered.

Healthy Snickers Protein Bars

Nougat Layer

  • 1 ½ cups almond flour
  • ½ cup vanilla protein powder (or ¼ cup multi-collagen)
  • ⅓ cup pure maple syrup
  • ¼ cup unsweetened almond milk

Date Caramel Layer

  • 5 large soft dates, pitted
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • Dash sea salt
  • ½ cup almond butter or other natural, creamy nut butter of choice
  • 2 tbsp maple syrup
  • ¼–½ cup filtered water or canned coconut milk (start small)
  • ½ cup raw or roasted peanuts (fold in after blending)

Chocolate Coating

  • 1 ½ cups dark chocolate chips
  • 2 tbsp coconut oil

Instructions

1. Make the Nougat Layer

Line an 8×8 baking dish with parchment paper.

In a large bowl, combine:

  • almond flour
  • protein powder
  • maple syrup
  • almond milk

Mix until a crumbly but sticky dough forms.

Press evenly into the lined pan to create the base layer.
Place in the freezer for 20 minutes or until firm.


2. Make the Date Caramel

Blend together:

  • dates
  • coconut oil
  • vanilla
  • sea salt
  • cashew almond butter
  • maple syrup
  • water or coconut milk

Blend until smooth and creamy, scraping the sides as needed.

Fold in the peanuts.


3. Layer + Chill

Remove the nougat from the freezer and spread the caramel evenly on top.

Return to the freezer for 1 hour until firm.


4. Melt the Chocolate

Melt chocolate chips and coconut oil together using a microwave or double boiler. Stir until smooth.


5. Slice + Coat

Remove from freezer and slice into 12 bars.

Using two forks, dip each bar into the melted chocolate until fully coated.
Place on a parchment-lined baking sheet.


6. Set

Place in the fridge or freezer for 12–15 minutes, until chocolate is fully hardened.


What They Taste Like

Soft, chewy nougat with gooey caramel, crunchy peanuts, and a rich chocolate shell. Sweet, salty, and perfectly balanced — just like a Snickers, but made with ingredients you can feel good about.


My Tips

  • Use soft Medjool dates for the best caramel texture
  • Freeze between layers so everything holds together
  • Add more liquid slowly to control caramel thickness
  • Store in fridge for best texture

These are one of those treats that feel nostalgic but a little more elevated — perfect for spring, Easter, or just keeping in the fridge for when the candy bar craving hits.

  • 1/2 cup almond butter or other natural, creamy nut butter of choice
  • 2 tbsp maple syrup
  • 1/4-1/2 cup filtered water or canned coconut milk (start small and add more for desired consistency)
  • 1/2 cup raw or roasted peanuts (fold in after making caramel sauce)

Chocolate Coating

  • 1 1/2 cups dark chocolate chips
  • 2 tbsp coconut oil

Instructions

  • Blend together date caramel sauce ingredients (besides the peanuts) and blend until desired consistency - you want it a little thick here. Then mix in peanuts with a spatula.
  • Remove the nougat from the freezer and spread the caramel evenly on top.

  • Melt chocolate chips and coconut oil together using a microwave or double boiler. Stir until smooth
  • Remove from freezer and slice into 12 bars.
