Avocado Brownies (16 Weeks Pregnant 💚🥑)

We’re officially at 16 weeks, and baby is the size of an avocado… so naturally, we’re making fudgy avocado brownies.

This one felt like the perfect way to celebrate — something chocolatey, cozy, and a little nourishing too. These brownies are fudgy, rich, and naturally sweetened, with healthy fats from avocado that make them extra soft and gooey.

And don’t worry — you won’t taste the avocado. It just gives that perfect brownie texture.

Avocado Brownies

Ingredients

  • 1 ripe avocado
  • 2 eggs
  • â…“ cup maple syrup
  • ¼ cup peanut butter
  • ¼ cup oat or almond flour
  • ¼ cup cacao powder
  • 1 tsp baking powder
  • chocolate chips – measure with your heart
  • pinch of sea salt – optional

Instructions

  1. Preheat oven to 350°F and line a baking dish with parchment paper.
  2. Mash the avocado
    In a bowl, mash until smooth.
    (You can also add everything to a blender or food processor for a smoother batter.)
  3. Mix wet ingredients
    Add the eggs, maple syrup, and peanut butter. Stir until fully combined.
  4. Add dry ingredients
    Mix in the flour, cacao powder, sea salt and baking powder until smooth.
  5. Pour + top
    Pour batter into your lined dish and sprinkle chocolate chips on top.
  6. Bake
    Bake for 15–20 minutes, depending on your desired texture (see notes below).

Make Them Sweeter (Optional)

These brownies are lightly sweet as written, but if you prefer a sweeter, more dessert-style brownie:

  • Add an extra 1–2 tablespoons maple syrup
  • OR mix in 2–3 tablespoons coconut sugar
  • OR use a slightly sweeter chocolate chip

You can also add extra chocolate chips on top for more sweetness in every bite.


Make Them Extra Gooey (or More Set)

  • Bake 15–20 minutes depending on your preference
    • 15 minutes = extra gooey, soft center
    • 18–20 minutes = more set, classic brownie texture
  • Add 1–2 tbsp extra peanut butter
    Makes them richer and more fudgy.
  • Use a very ripe avocado
    The creamier it is, the better the texture.
  • Add extra chocolate chips
    For those gooey chocolate pockets.
  • Don’t overmix
    Mix until just combined for the best texture.

My Tip

Pull them out when the center still looks slightly underdone — they’ll continue to set as they cool and give you that perfect fudgy bite.
