Strawberry Matcha Chia Seed Pudding
Matcha Layer
- 6 tbsp chia seeds
- ½ cup milk of choice
- 1 cup Lifeway Kefir (don’t skip this!!)
- 2 tsp culinary matcha
- ¼ cup yogurt of choice
- 3 tbsp maple syrup
- optional 1/4 cup vanilla protein powder (blend in with milk + kefir)
Strawberry Layer
- 6 tbsp chia seeds
- ½ cup milk of choice
- 1 cup Lifeway Kefir
- 5–7 strawberries, washed and hulled (blend with milk + kefir first)
- ¼ cup yogurt of choice
- 3 tbsp maple syrup
- optional 1/4 cup vanilla protein powder (blend in with milk + kefir)
Instructions
1. Make the Strawberry Layer
Blend together:
- strawberries
- milk
- kefir
Pour into a bowl, then add:
- chia seeds
- yogurt
- maple syrup
Whisk well until combined.
2. Make the Matcha Layer
In a separate bowl, whisk together:
- milk
- kefir
- matcha powder
Then add:
- chia seeds
- yogurt
- maple syrup
Whisk until smooth and fully combined.
3. Let Thicken
Cover both mixtures and refrigerate for at least 1 hour (or overnight) until thick and pudding-like.
4. Assemble
Once thickened, layer into jars or glasses:
- Start with strawberry chia pudding
- Add matcha chia pudding on top
Optional:
- Add a layer of strawberry chia jam at the bottom
- Top with extra yogurt and fresh berries
