  • 1 extra ripe banana, mashed
  • 1 large egg
  • 1½ cups milk of choice (I used a mix of cashew milk and kefir)
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp almond extract paste

Dry Ingredients

  • 2 cups rolled oats (gluten-free if desired)
  • 1 scoop vanilla or strawberry protein powder of choice
  • 1 tsp baking powder
  • ¼ tsp kosher salt
  • 1½ cups sliced fresh strawberries, divided

Instructions

Preheat oven to 350°F and lightly grease a baking dish.

In a large bowl, mix together the wet ingredients + protein powder until smooth.

Add in the oats, baking powder, and salt, and stir until just combined. Fold in most of the strawberries, saving some for the top.

Pour into your baking dish and top with the remaining strawberry slices.

Bake for 35–40 minutes, until set and lightly golden.

Let cool slightly before adding toppings.


Pink Glaze

Ingredients

  • dash of natural pink food color
  • ¼ cup powdered sugar
  • 1–2 tbsp milk of choice

Instructions

Mix until smooth and drizzle over the oatmeal bake.


Serving
