Copycat Café Part 12: Starbucks Matcha Swirl Loaf

I don’t know about you, but the second Starbucks releases a new bakery item, I’m already thinking about how to recreate it at home.

This time, it was their Matcha Swirl Loaf.

Between the vibrant green matcha swirl, sweet strawberry ribbon, and soft vanilla cake, it’s easily one of the prettiest loaf cakes I’ve seen in a while. The best part? Making it at home means you get thick slices, simple ingredients, and an entire loaf for less than the cost of a few coffee shop visits.

This loaf is soft, perfectly moist, and feels like the kind of treat that belongs next to an iced matcha on a sunny afternoon.

Ingredients

For the Loaf

  • 260g all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon sea salt
  • 160g unsalted butter, melted and cooled – can be plant-based
  • 140g sugar of choice – use Lakanto Monkfruit for sugar-free
  • 2 eggs
  • 240g sour cream or yogurt – can be plant-based
  • 2 teaspoons vanilla extract
  • 2 teaspoons matcha powder – linked my fav matcha powder
  • 2 teaspoons freeze-dried strawberries, crushed into a fine powder

For the Strawberry Glaze

  • 250g powdered sugar, sifted
  • 1–3 tablespoons milk
  • Pink food coloring (optional) – linked my fav non-toxic food color
  • Additional freeze-dried strawberry powder for garnish

Instructions

Preheat your oven to 350°F and line a loaf pan with parchment paper.

In a large bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, whisk the melted butter, sugar, eggs, sour cream (or yogurt), and vanilla until smooth and creamy.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix—the less you mix, the softer your loaf will be.

Divide the batter evenly among three bowls.

Stir the matcha powder into one bowl until fully combined.

Stir the crushed freeze-dried strawberry powder into the second bowl.

Leave the third bowl plain.

Alternate spoonfuls of the matcha, strawberry, and vanilla batters into your prepared loaf pan. Once all the batter is added, run a butter knife through a few times to create swirls. Don’t overdo it—you want to see all three colors when you slice into the loaf.

Smooth the top and bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.

Allow the loaf to cool in the pan for about 5 minutes before transferring it to a wire rack to cool completely.


For the Glaze

While the loaf cools, whisk together the powdered sugar and 1 tablespoon of milk. Add more milk a little at a time until you reach a thick but pourable consistency.

For that signature Starbucks-inspired pink glaze, add a tiny drop of pink food coloring or a little extra freeze-dried strawberry powder.

Once the loaf has cooled completely, drizzle the glaze generously over the top and finish with a sprinkle of freeze-dried strawberries.


Tips

  • Yogurt works beautifully if you don’t have sour cream.
  • Don’t over-swirl the batter or you’ll lose the distinct matcha and strawberry ribbons.
  • Freeze-dried strawberries provide the best natural strawberry flavor without adding extra moisture.
  • Let the loaf cool completely before glazing for the prettiest finish.
  • Pair with an iced strawberry matcha latte for the ultimate home café moment.

Final Thoughts

This might be one of my favorite Copycat Café recipes yet. It’s beautiful, surprisingly simple to make, and tastes every bit as special as something you’d grab from the Starbucks bakery case.

  • Divide the batter evenly among three bowls.
  • Mix the matcha powder into one bowl.
  • Mix the freeze-dried strawberry powder into the second bowl.
  • Leave the third bowl plain (or just do matcha and strawberry)
  • Spoon alternating dollops of the matcha, strawberry, and vanilla batters into the prepared loaf pan. Use a butter knife to gently swirl the colors together, then smooth the top.
  • Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool in the pan for about 5 minutes before transferring it to a wire rack to cool completely.
