Feeling *trendy* with pesto eggs on my warm salad for lunches the last week. I rarely buy pesto but my mother-in-law said the one from Costco is the best soo I had to try it. She wasn’t wrong, it’s pretty darn good!
Pesto Egg Warm Salad:
- 1-2 tbsps pesto
- 1 egg
- 1 egg white (or another whole egg, you’re preference)
- Sourdough toast
- Salad greens, I use arugula
- Sea salt
- Balsamic vinegar
- Lemon EVOO
- Air fried carrots
- Make your #PestoEggs by adding the pesto to a hot pan and then adding in your eggs. Let the eggs cook until desired doneness.
- Fix your warm salad by tossing together the arugula, sea salt, balsamic vinegar, and lemon olive oil. Add the carrots and cooked pesto eggs on top of the greens. Side of sourdough toast with butter because you’ll need something for dipping.
