Strawberry Banana Pancakes! Strawberry Week day six.

When my two favorite fruits come together to make the fluffiest of pancakes. Strawberry Week day six is stacked to perfection and tastes like a dream. I couldn’t share this pancake recipe with you fast enough!

Strawberry Banana Pancakes:

  • 1 medium banana
  • 1 cup fresh strawberries,
  • 1 + 1/2 cups whole wheat flour
  • 2 tsp baking powder
  • 1/8 tsp sea salt
  • 2 large eggs
  • 3/4 cup milk of choice
  • 1 tsp vanilla extract

Toppings:

  • strawberries
  • banana
  • yogurt
  • chocolate peanut butter syrup drizzle

Instructions:

  • Add the banana, 1 cup of sliced strawberries, eggs, milk, vanilla, and honey into a blender. Blend on high until smooth.
  • Next, add the whole wheat flour, baking powder, and sea salt into the blender and blend until your pancake batter is smooth. Be careful not to over blend!
  • Heat a flat skillet and spray with non-stick cooking spray. Use a 1/4 cup measuring spoon to ladle pancake batter onto the hot pan and let cook on one side for 2-3 minutes then flip. Press the pancakes down slightly and cook for an additional 2-3 minutes.
  • Plate and repeat until the batter is gone. Top with strawberries, banana, yogurt, and a chocolate peanut butter syrup drizzle.

Chocolate Peanut Butter Syrup Drizzle (serves two):

There’s only one more day left of Strawberry Week, I’m not ready for it to end yet!
