If you’ve ever wanted a caramel apple but didn’t want to commit to an entire apple on a stick, these are for you.

These Chocolate Covered Apple Slices are one of my favorite better-for-you treats because they’re simple to make, fun to customize, and give you that perfect combination of crisp apple, rich chocolate, gooey caramel, and crunchy pecans in every bite.
They’re perfect for after-school snacks, summer gatherings, fall parties, or honestly just keeping in the fridge for when a sweet craving hits.
And unlike traditional caramel apples, no wrestling with a giant apple required.

Ingredients
For the Apple Slices
- 2 apples, sliced about ¼-inch thick (Honeycrisp, Fuji, Granny Smith, or your favorite variety)
- Lemon juice
For the Chocolate Coating
- 8 ounces chocolate chips
- ½ tablespoon coconut oil (optional)
For Topping
- Vegan date caramel sauce – tap for my homemade recipe
- Crushed pecans
Instructions
Start by washing and thoroughly drying your apples.
Slice them into approximately ¼-inch thick rounds and carefully remove any seeds or stems.
Gently insert a kabob stick into the bottom of each slice. This makes dipping and eating much easier.
Squeeze a little lemon juice onto both sides of each apple slice. Let them sit for about a minute, then gently pat dry with a paper towel. This helps keep the apples fresh and prevents browning.
Next, add the chocolate chips to a microwave-safe bowl.
Microwave in 30-second intervals, stirring well between each round, until smooth and melted. If you’d like a thinner chocolate coating, stir in the coconut oil.
Using a spoon, coat each apple slice with melted chocolate, spreading it evenly across the surface.
Allow any excess chocolate to drip off before transferring the slices to a parchment-lined tray.
Place the tray in the refrigerator until the chocolate is completely set.
Once chilled, drizzle generously with date caramel sauce and sprinkle with crushed pecans.
Serve immediately or store in the refrigerator until ready to enjoy.
